While residing in the United States, we hardly ever made French fries at home. Crispy, golden fries were found at most dining places and were affordable to boot. But after shifting to a little town in the Peruvian Andes and encountering lots of greasy, limp fries, we observed if we ever again desired to enjoy restaurant-style French fries—crispy, tender, golden—we had to make them at home.Our 1st task was to choose the best variety of potato.
